Niçoise of mackerel

Ingredients for 4 persons

• 250 g of drained mackerel in oil
• 4 potatoes
• 4 mullets
• 2 mature tomatoes
• 200 g of broad beans
• 15 green olives
• 50 g of early spinach leaf
• 10 radishes
• extra virgin olive oil
• salt, pepper of Mulinello
• a tomato cut into thin strips, pepper and a bunch of parsley to garnish

Preparation

Boil separately potatoes and beans in salted water. Shell the beans and peel the potatoes. Clean and wash the other vegetables.
Slice the potatoes, the tomatoes and the radishes. Mix the ingredients, add the fillets of mackerel seasoned with oil, salt and pepper.
