Niçoise salad

Ingredients for 2 persons

• 1 box of tuna in brine 120g net
• 400 g of potatoes
• 200 g of green beans
• 10 black olives in brine
• 4 fillets of anchovies in oil
• half red pepper
• 1 tablespoon of olive oil
• 1 teaspoon of vinegar of white wine
• salt
• chives and onion

Preparation

Peel the potatoes and cut them into pieces. Put them in a saucepan with a teaspoon of salt and cover with cold water. Boil them until they will become soft but still "al dente".
Drain them and let them cooling. In another saucepan cook the beans in salted water and drain them before they become soft.
Drain the anchovy fillets and dry them well with absorbent paper. Slices the pepper in thin stripes. Distribut the potatoes, beans, drained tuna, the anchovy fillets, olives and the slices of bell pepper in two dishes.
Emulsify the oil with a tablespoon of water and vinegar and spill in the dishes. Salt slightly and add the chives or onion cut to thin slices.

Notes

Potete aggiungere per ogni persona un uovo sodo: sono circa 70 cal in più. Solo 20 cal in più per un pomodoro o per mezzo cetriolo.
